Dry Brining

The process of salting meat well in advance of cooking (usually 12-24 hours) to allow the salt to penetrate deep into the muscle and improve moisture retention.

Dry brining is superior to wet brining for most BBQ. It flavors the meat deeply while keeping the surface dry, which leads to a better, crunchier bark during the cook.
